Fix various issues

This PR:

• Stops reusing schema objects in duplicate response bodies in the $schema field (fix Reuse of matching request body structs results in incorrect "$schema" value being returned in response body #960)
• Stops setting example field in both schema and parameter objects, causing duplicate examples in some docs renderers (fix Huma integration with Scalar bug with examples #946)
• Implements a configurable DocsRenderer field in Config, and adds default support for Scalar and SwaggerUI
• Adds missing docs for nameHint tag (Allow providing name hints using tags for anonymous body structs #416)
• Upgrade to Go 1.24, now that Go 1.26 is out
• Bump all dependencies, resolve deprecated function calls
