Change category: repository cleanup — deleted two stale root-level files (shopware-extension-schema.json, shopware-project-schema.json).

Why no doc impact: these were leftover/duplicate schema artifacts at the repo root. The canonical, currently documented schemas are embedded in the CLI (internal/extension/config_schema.json, internal/shop/config_schema.json) and exposed via shopware-cli extension config-schema / shopware-cli project config-schema, which are unaffected by this change. No CLI command, flag, config key, or documented public behavior changed.
