Feature Request: Expose encoding and sse_read_timeout in MCP config

Describe the Feature Request

Currently, the Model Context Protocol (MCP) client configuration in AgentScope does not allow users to specify encoding and sse_read_timeout settings. This limits flexibility when connecting to certain MCP servers that require specific encodings or custom timeout durations for Server-Sent Events (SSE).

Proposed Solution

Expose encoding and sse_read_timeout parameters in the MCP configuration classes, passing them directly to the underlying mcp_client when initializing the connection.

This enhancement will give users more robust connection options and prevent timeout/encoding issues with custom or slow MCP servers.
